Recipe: Sweet and Sour Quick Pickles

July 4th is right around the corner and to me that means a backyard BBQ with family and friends. On my grill we usually have hamburgers, hot dogs, corn, and lots of grilled veggies - sometimes even fruit! This year I am going to make homemade sweet and sour pickles. We made them at camp with the kids and everybody loved them! They were so easy to make and take hardly any time to pull together. These pickles sure beat the store bought ones any day. Hope you give them a try!

Sweet and Sour Quick Pickles

Prep Time: 15 minutes

Cook Time: 20 minutes

Serves: 6 to 8 people

Ingredients:

1 pound (approximately 8) Persian cucumbers, sliced

1 medium red onion, thinly sliced

1/2 cup sugar

2 teaspoons sea salt

1 teaspoon freshly ground coriander seeds

1/8 teaspoon fresh cracked black pepper

3/4 cup apple cider vinegar

Directions: 

Add sugar, salt, coriander, black pepper, apple cider vinegar to a small saucepan. Stir together and cook until all of the sugar is dissolved and the liquid begins to simmer. 

Place cucumbers and onions in a medium size glass bowl. Pour hot pickling liquid over cucumbers and onions and let sit for 20 minutes.

Enjoy on hamburgers, sandwiches, or as a snack!
