What Do We Need?
1/2 cup red onion, diced
6 large carrots, slicked in thick rounds
1 cup green beans, cut into bite-sized pieces
2 tablespoons olive oil
2 tablespoons curry powder
1 teaspoon cumin seeds or black mustard seeds
1 cup water or vegetable broth
How Do We Make It?
Add the olive oil to a pan on medium high. When oil is heated, add the cumin seeds and cook for about 30 seconds, stirring constantly. Add onions and cook until onions become soft and slightly translucent.
Add the carrots and cook an additional 2-3 minutes stirring frequently. Add the curry powder and stir to combine and cook for about 1 minute.
Add the green beans and water. Cover and simmer for 15-20 minutes, until all the vegetables are soft.
Serve with naan or rice and enjoy!
